FARMHOUSE CIDER & BRAMLEY APPLE CAKE RECIPE

For those apples not being made into cider, why not use them in this equally tempting Cornish Orchards apple cake recipe!

Ingredients: 

150ml Cornish Orchards Farmhouse Cider (you can drink the rest!)
300g sultanas
250g butter, plus extra for greasing your tin
2 eggs, beaten
400g sieved plain flour
2 large bramley apples - 1chopped into small pieces, one for decorating
1tsp baking powder
1tsp mixed spice
Optional: icing sugar and ½ tsp mixed spice to decorate, Cornish clotted cream
You will need: a large baking tin or two cupcake trays


Method:

Before you start: Soak the sultanas in the cider, cover and leave in a cool place overnight

1. Cream the butter until light and fluffy, then add the beaten eggs

2. Mix in the flour, baking powder and spices

3. Add the chopped apple and sultanas (plus any unabsorbed cider!)

4. Spread the mixture into your greased tin or tray

5. If desired, decorate your cake with apple slices, then bake in the centre of the oven at 180C/gas mark 4 for approximately 45 minutes (keep an eye on the cake during cooking, if using a cupcake tray you may need less time)

6. Allow to cool, then if desired drizzle on the icing sugar mix and enjoy with Cornish clotted cream... delicious!
